Arrival nibbles

To start:

· Confit rabbit bonbons, Jerusalem artichoke puree and soused apple (m)

· Hot smoked salmon rillette, rye bread croutes, chive soured cream (f)

· Balsamic beetroot, slow cooked shallot, cheese shortbreads, burnt golden cross goat’s cheese (v)

Fish course:

· Local catch flounder ceviche, sweet potato crisp, trout eggs, turnip emulsion (f)

· Celeriac and lime, sweet potato crisp, pickled wild mushroom (v)

Main:

· Home cured bacon wrapped turkey breast, sage sausage meat cabbage parcels, celeriac dauphinoise, croissant bread sauce, jus (m)

· Duck breast, served pink, confit duck leg and leek sausage roll, roasted pear, parsnip and lime puree, blackberry and tarragon butter sauce (m)

· Hastings catch sea bass, smoked pickled onion tart tatin, cauliflower, caramelised apple (f)

· Beetroot gratin, sherry braised baby leek, buttered spinach, crisp kale, candied spiced walnuts (v)

All served with sharing dishes of roast potatoes, brussels sprouts in chestnut and leek cream, honey glazed roasted roots, steamed winter greens (v)

Pudding:

· Pear and almond tartlet, almond ice cream and pear wafer

· Passion fruit brulee, vanilla sable biscuit, house smoked chilli and cocoa granola

· Local cheese plate, charred pineapple chutney, soused satsuma, house water biscuits, thyme and truffle honey
